This is a wonderful, hearty soup that's packed with flavor. So simple to make, but it tastes like you had it simmering on the stove all day.
Tortellini & Sausage Soup
3 links Italian sausage (casings removed)
4 cloves garlic, minced
1 onion, finely diced
32 ounces chicken broth
½ cup apple cider
16 ounce can diced tomatoes
3 carrots
1 tsp dried basil
1 tsp dried oregano
9 ounce package cheese tortellini
2 tbsp dried parsley
Crumble sausage in a large stock pot over medium heat, and cook, stirring frequently. Drain the sausage when it’s about halfway cooked to remove excess fat (and calories!)
Add the onions and garlic to the sausage. Continue cooking until the onions are translucent and your sausage is fully cooked.
Process the tomatoes and carrots in a food processor until smooth. Add this mix to your stock pot along with the apple cider, chicken broth, oregano, and basil. Cover and simmer for 1/2 hour.
Add the parsley and simmer for another 10 minutes.
Add the tortellini and cook for about 4 minutes more, or until tender.
Garnish with shredded white cheddar cheese or with freshly grated parmesean cheese. Delish!
