This is a wonderful way to use up your apples that are now fully in season. A perfect breakfast for a cool fall morning! You can use whatever apples are your favorites. And as an added bonus, these use 100% whole wheat flour. So you can feel good about these "apple jacks" for breakfast!
Apple Jacks (Apple Pancakes)
1 1/4 cups whole wheat flour
2 tsp baking powder
1 egg
1 1/4 cup milk
1/2 tsp salt
1 tbsp brown sugar
1 tsp vanilla extract
1/4 tsp cinnamon
1 medium apple, diced
In a medium bowl, whisk together flour and baking powder, set aside.
In a large bowl, whisk together the egg, milk, salt, brown sugar, vanilla extract, and cinnamon.
Stir in the flour until just moistened.
Add in the apples, and stir to incorporate.
Preheat a skillet over medium heat, and spray with cooking spray. Pour about 1/4 cup of the batter into the pan for each pancake. Spray the skillet with cooking spray for each pancake. Cook until bubbly, about 1 minute. Flip, and continue cooking until golden brown. So yummy!
Makes about 8 pancakes
