Slow Cooker BBQ Pulled Chicken

This is an easy slow cooker chicken recipe that tastes great! I love the fact that using frozen chicken breasts works just as well as fresh, which is a time saver. Serve this on top of toasted whole wheat buns with swiss cheese. Yum!






Slow Cooker BBQ Pulled Chicken

1 medium onion, thinly sliced
2 pounds boneless skinless chicken breasts, fresh or frozen
1 cup ketchup
2 tbsp apple cider vinegar
1 tbsp dijon mustard
2 tbsp molasses
1 tsp onion powder
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp hot sauce
1/2 tsp salt

Evenly spread the onions on the bottom of your slow cooker. Place the chicken on top of the onions.

In a bowl, combine the ketchup, apple cider vinegar, dijon mustard, molasses, onion powder, cumin, garlic powder, hot sauce and salt. Pour the sauce over the chicken.

Cover and cook on low until the chicken is tender, about 3 1/2 hours.

Remove the chicken from the slow cooker to shred. Return it back to the slow cooker, mixing it with the sauce. Delish!
