Baked Linguine with Meat Sauce

This is a wonderful casserole recipe, especially when you know that company's coming! The green onions give it a fresh taste and provides a great contrast against the spicy beef.







Baked Linguine with Meat Sauce

2 lbs lean ground beef
2 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
1 (8 ounce) can tomato paste
1 (8 ounce) can tomato sauce
2 tsp brown sugar
1 tsp salt
1 tsp pepper
2 tsp oregano
16 ounces uncooked linguine
1 (16 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
1 bunch green onions, finely chopped (about 6-8 stems)
2 cups shredded sharp cheddar cheese

Preheat oven to 350 degrees.

Heat up a large skillet until nice and hot and then add the ground beef and garlic cloves. Break up the beef and cook until no longer pink.

Stir in the tomatoes, tomato paste, tomato sauce, brown sugar, salt, pepper, and oregano. Taste and adjust the seasonings accordingly. Cover and simmer for 30 minutes.

Cook pasta according to package directions and drain. Add to a greased 13 x 9 inch baking dish.

Stir together sour cream, cream cheese, and green onions. Spread over pasta. Top with meat sauce.

Bake at 350 degrees for about 20-25 minutes. Sprinkle with cheddar cheese and bake for about 5 minutes more until cheese is melted. Let stand 5 minutes. Enjoy!
