Easy Skillet Red Beans & Rice

I love the combination of beans and rice. Not only is it healthy and filling, but it is so good! And I like meals that you can play with and change according to your mood. This red beans and rice recipe uses smoked sausage as the meat, but if smoked sausage is not your thing, you can substitute chicken, pork, turkey...really whatever you like. And the recipe comes together so quickly! In under 30 minutes you'll have dinner on the table. And this meal goes perfectly with my Ultimate Cornbread. Add a nice salad, and you'll have a lovely dinner!









Easy Skillet Red Beans & Rice

2 tbsp canola oil
1/2 lb smoked sausage
1/2 onion, diced
2 cloves garlic, diced
1 heaping tsp Cajun seasoning
2 cups uncooked long grain white rice
2 cups chicken broth
1 (15 ounce) can kidney beans, drained and rinsed
1 bay leaf

Add the oil to a large frying pan over medium heat. Cut up the sausage into slices and fry in the pan for 1 - 2 minutes.

Remove the sausage from the pan and set aside.

Leaving the oil in the pan, sautee your onions for about 4 minutes.

Add in your garlic and the cajun seasoning, heating for an additional minute.

Add in the uncooked rice and sautee for a few minutes, stirring frequently, until it starts to get a little brown.

Add your chicken broth, kidney beans, and bay leaf. Turn up the heat to high, bringing to a boil. Then reduce to low, cover, and simmer for about 20 minutes.

Once your rice is done, remove from heat, remove the bay leaf, and stir in your smoked sausage.

Let it stand covered for about 10 minutes. Enjoy!
