Do you have a rice cooker? If you don't you are cheating yourself of some of the easiest, perfectly cooked rice you could imagine! It is one of those kitchen tools that you will use often and never regret purchasing. And you can get a basic rice cooker for as little as $10 at your neighborhood dollar store. Now you can't beat that, right? I love this recipe because lemon rice goes so well with a variety of dishes: fish, beef, pork, and of course chicken. I love it with my Easy Lemon Garlic Chicken and my famous black beans (I'll post that recipe soon!). So light and flavorful, I'm sure it will become a family favorite!
Easy Lemon Rice
2 cups rice
3 cups chicken broth
1/2 tsp garlic powder
2 tbsp dried parsley
4 tbsp lemon juice
2 tbsp butter
pinch of salt
Add all ingredients to the rice cooker, cover and set for regular cook cycle.
After the cooker switches to warm, leave covered for 5 minutes. Then uncover and fluff. So tasty!
Makes about 6 servings

Two words. Sooooooooooo Goooooooooooood! Lol. Anyways, the rice really was easy and had a distinct lemon flavor to it as well. Since we don't have a rice cooker (I'm working on getting mom and dad to get one btw) I cooked it on the stove top instead. Oh and I used basil instead of parsley since we don't have any. I don't know if these two factors change the way the dish comes out, but it tasted really good anyways. Great Recipe. Definitely gonna try it again sometime!
