Spicy Turkey Chili

I really love simple one pot meals where the ingredients are easy to find and the meal quickly comes together. This chili delivers! Now don't let the fact that it's "turkey chili" scare you. It's so much healthier for you because you save alot of the fat and calories. And get this...no one will ever know! Seriously. My sweet pea (hubby) didn't even know it was turkey. This spicy mix really gives you a nice hearty chili full of flavor. And adding some saltine crackers and shredded cheddar cheese on top makes it so yummy. With a nice salad, you have a complete meal. Now make this and see if you can fool your family tonight!




Spicy Turkey Chili

1 1/2 tsp olive oil
1 lb low fat ground turkey
1 onion, chopped
2 cups chicken broth
1 (28 ounce) can canned crushed tomatoes
1 (16 ounce) can kidney beans - drained, rinsed, and partially mashed
1 (16 ounce) can chili beans - drained, rinsed, and partially mashed
1 tbsp garlic powder
2 tbsp chili powder
1/2 tsp paprika
1/2 tsp dried oregano
1/2 tsp ground cayenne pepper
1/2 tsp ground cumin
1/2 tsp salt
1/2 tsp ground black pepper


Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.

Add the chicken broth to the pot. Mix in the tomatoes and beans.

Add the remaining seasonings.

Bring to a boil, then reduce heat to low, cover, and simmer 30 minutes. Delicious!

Makes 8 servings

** Helpful Note**
If you can plan ahead, make this chili the day before to really let the flavors blend together!
