Cajun Tilapia

I've already said how my hubby and I eat alot of fish, and this is one of my favorite ways to make it. Again, super simple ingredients and amazing flavor. Pan frying the fish in a little olive oil and butter is quick and it saves you all the fat and calories from deep frying. Enjoy!



Cajun Tilapia

4 tilapia filets
1 cup of corn meal
1 tbsp cajun seasoning
1/2 cup olive oil
2 tbsp butter
equal amount of dijon mustard & mayonnaise mixed together

Lightly coat the tilapia filets with the mustard and mayo mix (I use a pastry brush). Combine the corn meal and cajun seasoning. While the eat the olive oil and butter are heating up in a pan, dip the tilapia filets in the corn meal mixture completely covering each side. Add the tilapia to the pan and cook for about 3-4 minutes on each side or until you achieve a nice golden brown color. Drain fish on paper towels to remove excess oil. Consume with vigor!
