Here's another case where "homemade" is so much better than store-bought. These little lovelies are chewy and delicious. Enjoy by themselves or crumbled up over Greek yogurt. Yum!
Ingredients:
2 cups rolled oats
1/2 cup chopped walnuts
1/4 cup raisins
1/4 cup dried cranberries
1/4 cup butter
1/4 cup honey
1/3 cup packed brown sugar
pinch sea salt
1/2 tsp vanilla
Directions:
In a medium-sized skillet, toast oats and nuts over medium heat just until fragrant (be sure not to burn!).
Add the mixture to a bowl, along with the raisins and cranberries and set aside.
In the same skillet add butter, honey, brown sugar and salt.
Cook until bubbling and then continue to cook for 2 minutes.
Remove from heat and stir in vanilla.
Pour over the oat mixture and mix well until evenly coated.
Press into a 8×8 inch baking pan, lined with parchment paper. Use the bottom of a measuring cup to press down firmly on the granola. You want it to be firm and even.
Place in the fridge for about 20-30 minutes to firm up.
Remove the granola from the pan. Using a sharp knife, cut the bars evenly.
Store in a plastic storage bag separating the pieces with parchment paper, if stacking on top of each other.
Makes 12 granola bars.
