You can really warm your bones with this delicious, spicy soup! The sweet potatoes really add a nice flavor, giving you a healthy, filling dish.
Ingredients:
1 tbsp butter
1 onion, finely diced
3 ribs celery, diced
6 cloves garlic, minced
8 cups chicken broth
1 lb chicken, cooked and shredded
2 sweet potatoes, peeled and cubed
15 oz. can stewed tomatoes, undrained
1/4 tsp red pepper flakes
1 tsp dried marjoram
1/2 tsp dried basil
3 bay leaves
2 tsp salt
1 tsp pepper
Directions:
In a large 5 quart pot, melt the butter over medium heat.
Add in the onions. celery, and garlic. Cook for about 5 minutes, stirring occasionally, until the vegetables are tender.
Add in the remaining ingredients, except the chicken, and bring to a low boil, then reduce heat, and simmer, uncovered, for about 40 minutes, until the sweet potatoes are tender.
Stir it in the shredded cooked chicken and let it heat through.
Discard the bay leaves and serve.
