Italian Orange Roughy

Orange Roughy is my absolute favorite fish. And this recipe knocks it out of the park! So quick, so easy, and so delish. Few ingredients - big flavor. And you know what made this fish extra special? My wonderful husband cooked it all by himself. Sometimes the very best dinners are the ones you don't have to cook:-)



Ingredients

1/4 cup Italian seasoned bread crumbs
2 tbsp grated Parmesan cheese
2 tbsp grated Romano cheese
1/4 tsp garlic powder
1/2 tsp salt, or to taste
4 orange roughy fillets
1/4 cup butter, melted
1/2 tbsp dried parsley


Directions

Preheat oven to 400 degrees.

Coat a baking dish with non-stick cooking spray.

In a shallow bowl, mix the bread crumbs, cheese, garlic powder, and salt.

Brush both sides of the orange roughy fillets with butter, and dredge in the bread crumb mixture.

Arrange fillets in a single layer in the prepared baking dish, and sprinkle with parsley.

Bake at 400 degrees for about 15 minutes, or until the fish flakes easily with a fork.

Makes 4 servings.
