Fudgy Brownies

These are rich and delicious! So chocolately and yummy:-) The perfect combination with a scoop of vanilla ice-cream.


8 oz (1 cup) melted butter + extra for buttering the pan
15 1/4 oz (2 cups) sugar
4 large eggs, lightly beaten
1/2 tsp vanilla extract
2 1/2 oz (3/4 cup) unsweetened cocoa powder
3 oz (2/3 cup) unbleached all-purpose flour
1/2 tsp baking powder
1/2 tsp sea salt


* If you have a kitchen scale, I highly recommend using it - makes perfect brownies  every time!*

Preheat oven to 350 degrees and position rack to the center of the oven. 

Butter an 8 inch square baking pan; set aside.

In a medium bowl, combine the melted butter and sugar and whisk until well combined. 

Add in the beaten eggs and vanilla and whisk until well blended. 

In a large seperate bowl, whisk together the cocoa powder, flour, baking powder and salt. 

Combine the wet and dry ingredients together and stir until the batter is smooth.

Spread into your prepared pan and bake for approximately 35-40 minutes. 

Insert a toothpick into center to check and if it comes out clean or with just a few moist crumbs, the brownies are done. 

Let cool in pan for about 20 minutes  before cutting to serve.

Makes 16 servings.
