Chicken and dumplings is something that every cook should have in their recipe box. It's a classic dish that defines comfort food. These dumplings are hearty and really thicken up this soup to make it a meal. No need to roll out the dough or make perfectly shaped dumplings...just mix and drop. So easy, yet so good!
Homemade Chicken & Dumplings
Chicken broth:
1 tbsp olive oil
1 cup combined celery & carrots, finely diced
1/2 onion, finely diced
1/2 tsp poultry seasoning
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp garlic powder
1 tsp parsley flakes
1 bay leaf
3 boneless, skinless chicken breasts, cubed
10 cups chicken broth
Dumplings:
2 cups flour
1 1/2 cups water
4 tsp baking powder
1/2 tsp salt
1/2 tsp poultry seasoning
In a large stock pot, sautee the celery, carrots, and onion in olive oil for about 3 min, or until soft.
Add in chicken breasts, broth and seasonings and bring to a boil.
Whisk together the flour, baking powder, salt, and poultry seasoning in a mixing bowl.
Add the water and mix until the batter drips from a spoon (add more water for the right consistency, if needed).
Drop the dumpling batter from a spoon into the boiling broth and let cook covered and undisturbed for 15 minutes. Remove the bay leaf and enjoy!
