These cookies combine a lovely combination of spices that is perfect for those days when you want nothing more than to curl up on the couch with with a good book and nice cup tea. Enjoy!
Ingredients
2 3/4 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 3/4 cups sugar
2 1/2 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground cardamom
1 tsp ground allspice
1/4 tsp finely ground black pepper
1 cup butter, softened
1 egg
1/2 tsp vanilla extract
Directions
Preheat the oven to 350 degrees.
Line a baking sheet with parchment paper.
In a medium bowl, sift together flour, baking soda, baking powder and salt.
In a large bowl combine the sugar, cinnamon, ginger, cardamom, allspice and black pepper. Remove 1/4 cup of the sugar and spice mixture to use for rolling the cookies.
Add in the butter and beat on high with an electric mixer until light and fluffy, about 3 minutes.
Beat in the egg and vanilla extract, until well mixed.
Slowly blend in the dry ingredients by hand, mixing until just combined.
Using a small scoop, roll dough into balls and then into the sugar and spice mixture. Place onto your baking sheet about 1 1/2 inches apart.
Bake at 350 degrees for about 10 minutes.
Let stand on the baking sheet for 2 minutes before removing to cool. Yummy!
Makes about 30 cookies.
