A delicious way to eat your veggies! This recipe combines all the familiar Asian flavors into a wonderful sauce topped off with salted cashews. We like to enjoy it as a main dish served over hot rice.
Ingredients:
1 pound fresh broccoli, cut into bite size pieces
3 1/2 tbsp butter
2 tsp brown sugar
2 tbsp soy sauce
1 1/4 tsp white vinegar
1/8 tsp ground black pepper
1 1/4 cloves garlic, minced
3 tbsp salted cashews, coarsely chopped
Directions:
Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp.
While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat.
Mix in the cashews.
Drain the broccoli and arrange on a serving platter. Pour the sauce over the broccoli. Serve immediately.
