Really Good Sausage Marinara

This sauce has a deep complexity of flavor that you'd normally find in a sauce that you've cooked all day. This one just takes one hour. Really delicious!


Really Good Sausage Marinara

1 lb Hot Italian sausage, casings removed
1 small onion, chopped
1 1/2 garlic cloves, minced
1 (14 ounce) can stewed tomatoes
2 (3 ounce) cans tomato paste
2 (7 1/2 ounce) cans tomato sauce
1 cup chicken broth
1 1/2 tsp basil
1 tsp parsley flakes
3/4 tsp brown sugar
1/2 tsp salt
1/8 tsp crushed red pepper flakes
1/8 tsp ground black pepper
1/8 cup of a good dry red wine


In large, heavy stockpot, brown the sausage, breaking it up as you stir.

Add the onions and continue to cook, stirring occasionally until the onions are softened.

Add the garlic, tomatoes, tomato paste, tomato sauce and chicken broth.

Add the basil, parsley, brown sugar, salt, crushed red pepper, and black pepper.

Stir well and just bring to a boil.

Stir in the red wine.

Simmer on low, covered, stirring frequently for about 1 hour.

Makes 6-8 servings
