Butterscotch Brownie Bombs

A little indulgence can go a long way. It's all about portion control. I call these my little "brownie bombs". It's the perfect treat for when you need a chocolate fix. And the serving size won't throw you off your diet. Just remember to stop at one!


Butterscotch Brownie Bombs

1/2 cup butter
1 cup sugar
2 eggs
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup flour
1/4 tsp salt
1/4 tsp baking powder
1/4 cup butterscotch morsels
2 heaping tbsp crushed walnuts

garnish: generous topping of powdered sugar

Preheat oven to 350 degrees.

Grease and flour an 8x8 inch baking pan and set aside.

In a medium pot, melt butter over low heat. Remove from heat and stir in the sugar, eggs, and vanilla.

Whisk in the cocoa, flour, salt, and baking powder until well combined.

Spread the batter into your prepared pan.

Evenly sprinkle the butterscotch morsels and crushed walnuts on top.

Bake at 350 degrees for 25 min.

Let the brownies cool, then garnish with a generous sprinkling of powdered sugar.

Cut and place into paper cupcake holders. Enjoy!
