This is one of my absolute favorite dinners! It's quick and easy and tastes delicious. I serve it over Basmati rice. Combine with a nice green salad, and you're good to go! About as fast as you can get takeout delivered, you can have this yummy meal ready for your family.
Ingrdients
2 lb boneless skinless chicken breasts
4 tbsp canola oil
cornstarch
1 garlic clove, minced
1/4 tsp ground ginger
1/2 tsp crushed red pepper flakes
1/4 cup apple juice
1/3 cup brown sugar
2 tbsp ketchup
1 tbsp apple cider vinegar
1/2 cup water
1/3 cup soy sauce
Directions
Cut chicken breasts into cubes, and lightly dust with cornstarch.
Heat oil in a large skillet and fry chicken over medium until lightly browned.
Drain chicken on paper towels and set aside.
Add remaining ingredients to a bowl and whisk together thoroughly. Pour into skillet and bring to a boil.
Add the chicken back to the pan, and cook over medium low heat for 10-15 minutes, or until the sauce thickens to your liking. So good!
