Potato, Spinach, & Sausage Soup

This is a really quick and easy soup that is so flavorful. It pairs well with a nice salad to make a delicious lunch!




Potato, Spinach, & Sausage Soup

4 large russet potatoes, cubed
3 links hot Italian sausage, crumbled
3 cups fresh baby spinach leaves, roughly chopped
1 onion, finely diced
4 gloves garlic, minced
6 cups chicken broth
8 oz low fat cream cheese, cubed

Break up the Italian sausage in a large stock pot and cook until no longer pink.

Add the spinach, onion, and garlic. Cook for about 1 minute, or until the spinach is wilted.

Add the potatoes and chicken broth, bringing to a boil. Reduce heat and simmer, covered, for 15 minutes.

Add in the cream cheese, stirring frequently until melted. Delish!

Makes about 8 servings
