I was literally speachless when i took my first bite. The name says it all....and you can make it in one bowl! How great is that?
The Best Chocolate Cake...Ever
2 cups flour
2 cups sugar
3/4 cup cocoa powder
2 tsp baking soda
1 tsp baking powder
2 eggs
1 tsp salt
1 cup buttermilk
1 cup canola oil
1 1/2 tsp vanilla extract
1 cup double strength hot coffee
Preheat oven to 300 degrees.
Grease and flour a 9 x 13 inch baking dish.
Place all of the ingredients, except the cup of hot coffee, into a large mixing bowl.
Mix at medium high speed for about 1 minute and then add in the hot coffee.
Continue to mix until all the ingredients are blended and smooth.
Pour into the baking dish and bake at 300 degrees for 1 hour.
Allow to cool completely if you want to frost it. Or, just add powdered sugar on top like I did for a pretty garnish. Delicious!
Makes about 12 absolutely wonderful servings
**Helpful note**
If you want to make cupcakes, reduce the baking time to 22 - 23 minutes. Be sure to use cupcake liners.

Cheri.....you should really consider changing the name of this recipe to The Best Chocolate Cake...Ever. Oh, wait that's the name of it already! Lol never mind then! Anyways, it was really easy to make (the mess I made was easy to clean up too since dad cleaned :) and it tasted so rich and so chocolaty that it was halfway gone before I went to bed for the night! Such a good recipe! I'll try it with frosting instead of powdered sugar next time.
