Quick Lemon Pepper Chicken
2 boneless, skinless chicken breasts
salt & lemon pepper
juice of 1 lemon
2 tbsp milk
2 eggs
1/4 cup flour
4 tbsp butter
Lay the breasts down on a cutting board and use a sharp knife to cut them horizontally so that you will have 4 thin breasts. Season both sides generously with salt and lemon pepper.
In a shallow bowl, whisk the milk and the eggs together.
Spread the flour on a plate.
Melt 4 tablespoons of butter over medium high heat in a large skillet. Add the juice of 1 lemon to the skillet.
Dredge the chicken breasts in the flour, shaking off the excess, then dip them in the egg and transfer to the skillet. Cook until golden, 2-3 minutes per side.
So quick and so good!
