I don't think it's possible to have too many chicken recipes. My hubby and I try to limit our intake of red meat, so we eat alot of chicken and fish. And it's hard to think up new ideas! So if you're looking to do something a little different with chicken breasts, this recipe is for you. You should know by now how I'm a big fan of simple ingredients that you are likely to have on hand without taking a special trip to the grocery store. This recipe uses common everyday ingredients. Now let's talk about the flavor! It's way better than take out and than anything you would get at a restaurant. We had ours with baked brown rice & steamed veggies. There's absolutely nothing like home cooking. Now go on and amaze your family tonight!
Sweet & Sour Chicken
Chicken:
3 boneless skinless chicken breasts
Salt and pepper
1 cup cornstarch
2 eggs, beaten
1/4 cup canola oil
Cut up the chicken breasts into large chunks. Season with salt and pepper. Dip the chicken in the cornstarch first and then the egg. Fry the chicken in oil until lightly browned on each side, but not cooked through. Place in a single layer in a baking dish. Mix sauce ingredients (below) together and pour over chicken.
Sweet & Sour Sauce:
¾ cup brown sugar
4 tablespoons ketchup
½ cup white vinegar
1 tbsp soy sauce
1 tsp garlic salt
Bake for about 45 minutes at 325 degrees. Turn chicken after 20 minutes so it's evenly coated with the sauce. Delish!
Makes 4 servings
