Sour Cream Mashed Potatoes

Mashed potatoes make a nice side dish to accompany a number of meals. These mashed potaoes are simply the best. This is my go to recipe because they always come out so smooth and creamy. Once again we see simple ingredients and fantastic results! The sour cream added to the potatoes really gives them an extra creaminess and zip. And they make the perfect side dish to the Slow Cooker Cola Beef I'll post about tomorrow. Stay tuned!




Sour Cream Mashed Potatoes

3 pounds potatoes, peeled
1 1/2 cups milk
6 tbsp butter
1/2 cup sour cream
salt & pepper to taste

Cut the potatoes in half and place them in a large pot. Cover the potatoes with cold water. Bring to a rapid boil, then lower the heat and simmer, uncovered, for about 20 minutes, until the potatoes are fork tender.

While the potatoes are boiling, heat the milk and butter in a small saucepan until steamy. Make sure it doesn't boil.

As soon as the potatoes are tender, drain and mash them. Slowly add in the hot milk and butter mixture to make the potatoes very creamy. Add the sour cream, then salt and pepper to taste. Mash well to combine until smooth and creamy. Enjoy!
