Easy Chicken Salad

Everyone has their own way to make chicken salad. I've tried many different ingredients and combinations, but I always seem to come back to this recipe. It uses simple ingredients that you most likely always have on hand. Prepare to make this a day before to really let all the flavors meld together!



Easy Chicken Salad



1 boneless skinless chicken breast
1/4 tsp paprika
1/4 tsp seasoning salt
1/2 tsp olive oil
1/2 tsp mayonnaise
1/2 tsp dijon mustard
1/2 lemon juice
1/2 diced granny smith apple
1 tbsp chopped onion
dash of cayenne pepper


Combine the paprika, seasoning salt, and olive oil in a zip lock bag and place the chicken breast inside coating it completely with the mixture. Refrigerate for a least 1 hour. Place the chicken breast in an oven safe dish and broil for about 10 - 15 min (depending on the thickness of the breast). While the chicken is in the oven, combine the remaining ingredients. Once the chicken is done, shred it and mix together with the remaining mixture. Refrigerate overnight to let the flavors meld together. Enjoy!
