Chewy Oatmeal Raisin Cookies

Oatmeal raisin cookies are my husband's absolute favorite. Unlike most people, chocolate chip does not sway him in the least. So these make an appearance in our kitchen pretty often! When my husband and I were dating I tried out different recipes to find the perfect cookie for him. But most were just too sweet for us. After experimenting quite a bit, I finally got it. These have just the right amount of sweetness and a nice chewy texture. Exactly what a great cookie should be! Now go and make these for your special someone today:-)
Chewy Oatmeal Raisin Cookies

1 cup (2 sticks) butter, softened
1 1/2 cups brown sugar
2 eggs
1 tsp vanilla extract
1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups old fashioned whole oats
1 cup raisins

Preheat oven to 350 degrees.

In a large bowl, beat together the butter and sugar on medium speed until creamy. Add eggs and vanilla extract, beating well.

In a smaller bowl, whisk together the flour, baking soda, cinnamon, and salt. Add this flour mixture to the egg mixture mixing well by hand.

Stir in the oats and raisins, mixing well.

Drop the cookie batter by rounded tablespoons onto your cookie sheet.

Bake at 350 degrees for about 12 minutes or until golden brown. Cool for 1 minute on the cookie sheet and then eat up!

Makes about 2 dozen delicious cookies
