Muffins in the morning! The perfect snack for when you're on the go. And the combinations are endless, but for my hubby and I, banana and blueberry are our favorite. This recipe has simple ingredients that come together quickly resulting in a moist, delicious little muffin. Have a flavor explosion in your mouth!
Banana Blueberry Muffins
4 large mashed bananas
1/2 cup frozen blueberries tossed lightly in 1 tbsp flour
1/2 cup brown sugar
1 slightly beaten egg
1/3 cup melted butter
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups flour
Mix the mashed banana, blueberries, sugar, egg and butter together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together.
Pour into greased muffin tins, and bake at 350 degrees for about 20 minutes. Enjoy!
Makes 12 muffins
