Butter Bean Beef Soup

This recipe came about after looking in the kitchen and seeing what I could whip up from "a little bit of this and a little bit of that". The result was a surprisingly comforting, flavorful soup that took minimal effort and tasted delicious. Perfect for a weeknight with dinner rolls and a nice salad!




Butter Bean Beef Soup

1 tbsp extra virgin olive oil
1 carot, finely diced
1/2 onion, finely diced
1 celery stalk, finely diced
1/2 lb ground beef
1 15.5 oz can butter beans, rinsed
4 medium potatoes peeled & diced
5 tsp Better Than Bouillon Beef
5 cups water
1/2 tsp garlic powder
1/2 tsp marjoram
1 tsp parsley
salt & pepper to taste

In a medium stock pot, add the oil, and sauté the carrot, onion, and celery at medium high heat for about 2-3 minutes, or until soft.

Add in the ground beef and cook until browned.

Add in all of the remaining ingredients, except the salt and pepper, and bring to a boil. Boil for about 10 minutes, then reduce heat to low and cover, simmering for 30 minutes.

Remove from heat and add salt and pepper to taste. Enjoy!
