Roasted Pork Chops & Potatoes

I just love the flavor of these chops! Cajun Seasoning really adds a nice zip to this recipe. And the seasoning is to taste, so you can adjust accordingly. Add lots of veggies or a big salad for a complete meal. Enjoy!














Roasted Pork Chops & Potatoes

2 tbsp olive oil
4 pork chops, about 3/4 inches thick
2 tbsp flour
Cajun Seasoning to taste
4 to 6 medium potatoes
2 cloves garlic, minced
1/2 cup chicken broth
pepper to taste

Preheat the oven to 350 degrees.

Spray a glass baking dish with cooking spray.

Add olive oil to a large skillet over medium high heat. Combine the Cajun seasoning and flour together and sprinkle evenly over the chops. Add to the pan and brown for a few minutes on each side. Remove to the baking dish.

Wash and cut the potatoes into 1/2 inch thick wedges and sprinkle with a little Cajun seasoning and pepper to taste and then add to the large skillet. Add in the garlic. Toss to coat with the oil and garlic. Fry for a few minutes, then add on top of the pork chops in the baking dish.

Drain off any excess oil from the skillet, then deglaze it with the chicken broth, scraping bits off the bottom. Bring to a boil then pour the liquid over the chops and potatoes.

Cover and bake at 350 degrees for about 45 minutes.
